Chaoux Au Craquelin
Craquelin Ingredients
- 135 gr butter
- 125 gr powdered sugar
- 135 gr flour
Method
- 1. Beat butter and powdered sugar until creamy. Add flour, mix with a spatula until smooth.
- 2. Put in plastic, roll size 14 * 18 cm.
- 3. Put in plastic, roll out to a thickness of about 2 mm, store in the freezer until the dough is stiff.
Choux Material
- 230 gr water
- 120 gr butter
- 1/2 tsp salt
- 1 tbsp sugar
- 135 gr high protein flour
- 3 large eggs (me 4)
How to Make Choux
- Bake in the oven at 180 and above 160 about 30 minutes, convection off. Then down 180 over 140 sktr 5 minutes. Prick with a toothpick, rotate position, bake another 5 minutes. Then let it cool on the oven that has been turned off / on the cooling in the oven with the door slightly open
