soy milk / tofu water

Ingredients

  • 500 g soybeans
  • 2 liters of water (for the first juice)
  • 1 liter of water (for the 2nd squeeze)
  • 70 g ginger, sliced ​​2
  • 5 pandan leaves, tear and tie
  • 300 gr sugar

How to make

  • 1. Wash soybeans with clean water for 2 times. Soak in clean water overnight. The next day, squeeze and remove the skin. Rinse again several times until the bad smell is gone.
  • 2. Puree the soybeans by adding 2 liters of water (dividing several times) using a food processor
  • 3. Squeeze using a cloth filter.
  • 4. Set aside the first juice dregs in a container, pour water (1 liter), mix well then squeeze again.
  • 5. Strain again to make sure there is no pulp involved.
  • 6. Enter the pandan leaves and ginger, cook over medium heat, stirring gently until it boils.
  • 7. Pour sugar, cook again until boiling. Remove and ready to be enjoyed warm or added with ice cubes.
