Clementine Upside Down Cake

Ingredients

  • 5 pcs Clementines / medium size sweet oranges, peeled
  • 180 gr wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 90 gr unsalted butter, room temperature
  • 120 g sugar
  • 100 ml liquid milk
  • 5 eggs
  • 1/2 tsp lemon juice
  • Extra sugar for sprinkling

How to make

  • 1. Preheat oven to 160°C. Line a round baking pan (22cm) with parchment paper.
  • 2. Slice crosswise (horizontally) each orange into 4 parts.
  • 3. Sprinkle a little sugar on the baking sheet lined with parchment paper earlier. Arrange the orange slices neatly and tightly on the baking sheet.
  • 4. In a bowl, mix flour, baking powder and salt. Set aside.
  • 5. In another bowl, mix butter and sugar until light and fluffy. Add the liquid milk, then add the eggs one by one while still mixing until a thick, trailing dough forms. Finally, add the lemon juice. Stir well.
  • 6. Sift flour mixture into egg mixture. Stir with a spatula until well blended and homogeneous.
  • 7. Pour the batter into the pan. Smooth the surface. Bake in the oven for 40-45 minutes / until the center of the cake is perfectly cooked (do a toothpick test). Adjust to each oven. Turn off the oven.
  • 8. Let the cake cool in the pan at room temperature.
  • 9. Prepare the cake plate. Then carefully turn the pan over on a plate. Remove the baking sheet and parchment paper. Cake is ready to be cut and served.
