Ingredients

  • 300 gr high pro wheat flour
  • 50 gr flour pro medium
  • 70 g sugar
  • 100 gr yam puree (steamed and mashed yam)
  • 5 g instant yeast
  • 1 whole egg (weight without shell 50gr)
  • 130 gr cold liquid milk
  • 50 gr butter
  • 5 g salt

How to make

  • 1. Mix all ingredients except butter and salt, mixer until smooth using STAND MIXER MX-700 @mito.id (me: speed 3 for 5 min)
  • 2. Add butter and salt, mix again until elastic (me: speed 3 for 10 minutes)
  • 3. Round it, cover with cling wrap/cloth and rest for 1 hour or until it has doubled in size.
  • 4. Deflate the dough, divide into 12 pcs @60gr. Round, cover with cloth and rest 15 min.
  • 5. Take the dough and shape it, arrange it on the baking sheet. Cover the cloth and let it rise until it doubles. Brush with liquid milk.
  • 6. Bake using FANTASY MO-888 OVEN @mito.id with a temperature of 175C on top and bottom for 18 minutes / until cooked, adjust the oven for each (preheat oven 10 minutes before)
  • 7. Once cooked, brush the surface of the bread with butter.
