Ingredients

  • 340 gr high protein flour
  • 1.5 tsp instant yeast
  • 30 g sugar
  • 140 ml liquid milk
  • 1 egg
  • 1/4 tsp salt
  • 60 gr butter
  • 100 gr broccoli flower, puree in a food processor
  • 140 gr grated cheese
  • Milk wash: 2 tbsp liquid milk
  • Extra butter for greasing

How to make

  • 1. In a bowl, mix flour, yeast, sugar, milk and eggs. Knead briefly until well blended. Add salt and butter. Knead until half smooth. Add broccoli and grated cheese. Knead until really smooth and elastic.
  • 2. Cover the dough tightly and keep it in a warm place for 60 minutes / until it has doubled in size.
  • 3. Prepare a loaf pan. Grease a little oil, then cover with parchment paper.
  • 4. Deflate and widen the dough. Divide into 3. Take 1 dough, fold it in 2, then roll it tightly. Place it on the pan. Do it until the dough runs out. Cover tightly and keep in a warm place for 45 minutes.
  • 5. Preheat the oven to 180°C from top to bottom.
  • 6. Grease the surface of the dough with milk wash. Bake in the oven for 30-35 minutes / until the surface of the bread is browned and feels hollow when tapped. Turn off the oven.
  • 7. While still hot, grease the surface of the bread with butter. Serve while warm / at room temperature.
